Saba Blue Water Cafe, which was launched in Austin's Warehouse District by partners Chuck Smith and executive chef Larry Perdido around the idea of small plates to share, has moved beyond the appetizer-style fare.
That is the result of an expansion into Houston, where the second Saba Blue Water Cafe has become a popular spot in a revitalized area downtown near the theater district.
In Houston, Perdido and Smith wanted to give diners a full-meal option, which meant discernible entrees on the menu. The result was a hit, and they have brought the concept to Austin, where the kitchen is somewhat limited by its small size.
Still, there was no compromise in the quality and presentation of the entrees handled locally by chef and kitchen manager Matt Krieg.
Selected from the six main-course items that included paella, a smoked pork chop, salmon and beef tenderloin, the mahi mahi ($17) was served with a lemongrass cream sauce and grilled bananas. The seasoned fish, atop a mound of grilled pineapple-cilantro rice, was flaky tender. The bananas, coated in an Asian barbecue sauce, were dark, soft and tasty.
The pepita-crusted chicken ($14) was paired with a goat cheese bread pudding that had the appearance and consistency of dressing. The moist, flavorful chicken with a crisp coating from the ground pumpkin seeds was served with a Hatch green chile cream sauce that gave it a mild zing.
