Kirk's Steakburgers

American

75 Town & Country Village, Palo Alto, CA, 94301

AFTER WORLD WAR II, Bill Sincere and his wife, "Kirk" relocated to California from New York. Bill had spent most of his life in retail, but wantedto try something new while enjoying the California climate. He considered sales but kept thinking about how restaurants in New York prepared burgers and hot dogs. They cooked them one at a time over charcoal, let customers add their own toppings, and served them with potato chips and great milkshakes. The basic idea was good meat served without fanfare. The only problem was that during severe New York weather, many businesses closed for several months. Maybe in California!Bill searched everywhere in California, but couldn't find anyone doing burgers this way. Just as he was about to give up and take a sales job at Macy's, his mother gave him a small loan and encouraged his entrepreneurship. The rest is history. Bill rented land on El Camino Real in Palo Alto, built a small building, found a butcher who would grind his steak, and opened the first Kirk's Steakburgers in 1948.Word quickly got out about Kirk's Steakburgers. First came the Stanford students, then the developers, and then the early electronic wizards (Robert Noyce, William Hewlett, David Packard, Varian brothers. Watkins and Johnson, etc.). Everyone wanted a Kirk's Steakburger. Long lines snaked along El Camino. turnover was fast. and everyone enjoyed chatting with Bill as he flipped burgers better than anyone around.Today Kirk's has four locations, has expanded the menu to include their signature French fries, garlic onions strings, and over 20 specialty steakburgers. And they still use the same butcher to prepare the now famous Kirk's Steakburgers. And if that's not enough tradition, there have been several second and third generation employees, which makes sense, since Kirk's has many second and third generation customers. Do you remember your first Kirk's Steakburger?

Cafe 220

American

220 B University Avenue, Palo Alto, CA, 94301

Food historians generally attribute the origin of kebabs to ancient Middle Eastern cooks. In a land where fuel was scarce, this was a very efficient way to cook meat. Small pieces of meat (smaller the cut, faster they cook) threaded on skewers would have required very little fire. The recipes and combinations are endless.
"Kebab. A dish consisting basically of small pieces of meat threaded on to skewers and grilled or roasted. It originated in Turkey and eventually spread to the Balkans and the Middle East. The name is a shortened form of the Tukish sis kebab, sis meaning skewer and kebab meaning roast meat."---Larousse Gastronomique, completely revised and updated [Clarkson Potter:New York] 2001 (p. 646)
"Sis Kebabi...It is said that shish bebab was born over the open-field fires of medieval Turkic soldiers, who used their swords to grill meat. Given the obvious simplicity of spit-roasting meat over a fire, I suspect its genesis is earlier. There is iconographical evidence of Byzantine Greeks cooking shish kebabs. But surely the descriptions for skewering strips of meat for broiling in Homer's Odyssey must count for an early shish kebab."---A Mediterranean Feast, Clifford A. Wright [William Morrow:New York] 1999 (p. 333)

The Van's

American, Steak House

815 Belmont Avenue, Belmont, CA, 94002

The history of The Van's is a colorful tale that dates back to around the turn of the century. Built in 1915, it originally was erected to house part of the Japanese Exhibition at the Panama Pacific International Exposition held in the San Francisco Marina District in commemoration of the opening of the Panama Canal. At the close of the exposition, all but two of the buildings were dismantled -- the Palace of Fine Arts, which remains standing in San Francisco, and the Japanese Tea house.
Land Baron, E.D. Swift, purchased the Tea house in 1915 and barged the entire structure down the Bay to Belmont, California where the house then served for three years as a private residence for Swift's two daughters. In 1921, teams of horses and mules pulled the structure up a steep dirt trail to its present location nestled in the hills overlooking the Bay Area.
In 1933 during Prohibition, Elsie Smock bought the house and under the name "Elsie's," she offered bootlegged whiskey to a select group of friends and acquaintances. The speakeasy was also rumored to have slot machines and dice games operating on the first floor, and the use of the third floor was quite suspect as well.
A trolley that ran from San Francisco to Redwood City was the popular means of transportation to an from the secluded hideaway. With the repeal of Prohibition in 1933, Elsie's became a legalized saloon, however, stories of gambling and harlotry lingered.
Upon her death in 1945, Elsie left the establishment to a prominent Burlingame citizen, and the saloon was turned into an Italian restaurant. Business partners Gene Soule and Ivan Sawyer bought the restaurant in 1947 and renamed it "Gevan's." Ten years later they dissolved their partnership and Sawyer, who retained ownership of the restaurant, subsequently shortened the name to "The Van's."

The Melting Pot

American, Fondue

2 North B St., San Mateo, CA, 94401

Fondue is a fun and interactive dining experience - and for more than three decades, The Melting Pot has defined the niche across the American dining scene.
The first Melting Pot opened in April of 1975 in Maitland, Fla. - just outside of Orlando. It was a cozy, quaint location and its first menu consisted of just three items: Swiss cheese fondue, beef fondue and a chocolate fondue dessert. However, as the restaurant's popularity expanded, so did its menu and ambiance.
Mark Johnston, who was working his way through college as a waiter at The Melting Pot, noticed the popularity boost and - with the help of his brothers Mike and Bob - scraped together funding to open The Melting Pot of Tallahassee in 1979 (with the blessing of the original owners in Maitland... of course). The Tallahassee location grew enormously popular, and within one year its success paved the way for future franchise expansion.
In 1980, the Johnston brothers decided to branch out and opened their second location in Tampa. As their business grew, the brothers began to consider franchising even more stores in order to expand. Then in 1985 Mark, Mike and Bob Johnston purchased all rights to The Melting Pot brand and established The Melting Pot Restaurants Inc. - the new franchise company. After a year of research and reorganization, The Melting Pot Restaurants Inc. began its franchise offering.
From the start, the Johnstons were diligent in their search for energetic entrepreneurs who were as excited as they were about the concept and its potential. And their commitment to building a close-knit fondue family proved successful.
Today, with more than 120 locations across 34 states and with more than 45 locations under development, The Melting Pot Restaurants Inc. is the country's premier fondue restaurant franchise.
