The Incas were the native American of the Andes mountains of Peru, and were known for being one of the most advanced civilizations of the Americas of the entire world
In the days of the great Incas empire, in their ancient language of Quechua, the word Choza translated to house. The Choza was a home for the Inca people. The Incas believed in a zest for life that was required by the shining sun god INTI, So the Incas put color and vibrant life into every facet of their lives.
Throughout centuries, their customs and traditions have lived on, and so have left us with an incredible array of authentic dishes full of color and spice, bringing rich flavors that can only be found in Peruvian food.
