Mongolian BBQ originated in the Yuan Dynasty during Genghis Khan's advance westward. THese barbarian soldiers were famous for their exceptional skill in teh art of war. Where they were victorious in a battle, they would celebrate by consuming mountains of beef and multon. Since they lacked cookers, the meat was broiled on heavy bronze shields. Such a style of savoring meat gradually developed into the Mongolian BBQ of today.

You can find the front door of Spencer's Smokin' Grill with your eyes closed. The aromas from the wood fire smoker will lead the way. Once inside, you will discover a menu that begins with pork, and then heads in many tempting directions. All the dry rubs at this barbecue hub are made from scratch, and the pork is smoked for 16 hours. A mining theme runs through the menu, consistent with Park City's history as a mining town. You can get anything from a Mini Miner Meal for the little prospector in the family to the Mother Load to go. The latter comes with two whole rotisserie chickens, a full rack of ribs and a pound each of tri-tip and barbecue pork. Four side dishes are included in this feast fit for a whole crew. For vegetarians, there's the Smokin' Tofu & Fire Roasted Vegetables. Seafood lovers are offered such choices as the Smoked Salmon Wrap and Smokin' Fish & Chips. Owners Mark & Susan Spencer ditched their jobs in California to come to Utah and start a new with barbecue. All of our meats are slow-smoked (when we say slow, we mean slow! Some cuts get almost 16 hours of cooking time!) Over smoldering coals made from a combination of oak, hickory and fruitwood. By the time we've trimmed, slathered, rubbed and smoked these tasty cuts of beef, pork and chicken we've developed a warm and fuzzy feeling for each piece of meat we serve.
