Capone's Cucina History"Since I was a kid, I've always loved to cook" -Dino At age 16, Dino started making pizzas and lasagnas for his family and friends. When neighbors kept coming back for his traditional Italian cuisine, Dino realized he had a special gift.Since that first "restaurant" in his mother's kitchen, Dino has cooked all over the world and settled in Huntington Beach, CA. When he first left home, Dino wanted to open his own restaurant, but saw how other chefs struggled so he decided to go to dental school and leave his dreams of cooking behind. Halfway through school, he decided to open a restaurant to help pay his tuition bills. Once he had his own kitchen, Dino knew that he'd never go back to the dentistry program.Capone's Pizza and Pasta opened in Westminster in 1997. It was at this location that Dino expanded his repertoire and added specials to the standard menu. Customers were hooked on Dino's ability to transform everyday ingredients to culinary works of art and they couldn't help but come back again and again.He sold Capone's Pizza and Pasta in 2000 and moved to Huntington Beach where he opened Capone's Cucina with a goal of creating a more gourmet dining experience.In 2002, Dino hired friend and fellow chef, Francois Lieutaud to create a unique paring of French and Italian cuisine. The combination made for an old world European feel and customers loved the larger selection of dishes. Though Chef Lieutaud has left Capone's Cucina to open his own restaurant, the French menu is still going strong and offers the best rack of lamb in Orange County.Though Dino has always catered, he's now equipped to offer his services to larger area and his catering menu is available online. This family owned-and-operated eatery is a tiny place where the authentic cuisine (ancestral recipes direct from Southern Italy) contradict the decor (plastic grapes, hanging empty wine bottles and autographed photos of Mohammed Ali). During the day, the window-walled, dim main room bustles with the constant action of customers picking up takeout orders. At night, the place is somewhat of a gathering point for local families, young couples and the occasional group traveling over 20 miles for their stuffed crust pizza.
Big on Catering for schools, sports teams and businesses, Sal's is well known for his STUFFED Pizza, a huge thick well filled pie that is really a dinner unto it self but goes well with salad, garlic bread and a good wine from Sal's wine cellar!
Sal's focuses on an extensive number of unique pasta dishes, baked casseroles and simple dinner entrees prepared with basic ingredients. They excel at the four basic sauces (marinara, Bolognese, pesto and arrabiata) and each is offered with a choice of seven pastas. Their specialty dishes range from the rich penne matriciana, with tomatoes and Italian bacon tossed into a tart onion sauce, to the more elaborate seafood variety of mussels, calamari and shrimp frutti de mari with tender linguine. The entree selection doesn't end there, though. Along with the catch of the day, there is the standard chicken parmigiana, as well as a veal scaloppini prepared in whatever way the chef feels like making it that day.
