Named for the Chimu Empire that ruled the northern coastal region of Peru until the Inca conquered them around 1476, the Gran Chimu offers authentic Peruvian dishes including the famous 3 Ajies Ceviche. Choose from Corbina ceviche made with a large tasty white fish related to Sea Bass; mixto (fish and shellfish); mariscos (a mixture of shrimp, mussels, squid rings, and nabs of octopus) or just shrimp. All come garnished with sliced purple onions and boiled chocolo, a thick slice of sweet potato, and a handful of chanca (toasted dried corn). The adventurous should try Huevera a lo Macho, a corbina roe fried until crispy and smothered in a creamy sauce studded with shrimp, mussels, and squid. End with Picarones, a pumpkins fritters in syrup, or a slab of King Kong, a pineapple flavored caramel sandwiched between two square crackers. Nothing makes a Peruvian happier!
