Proprietors Linda and Chef Joe Andes are Hackettstown locals who wanted to open a local restaurant with quality food and a warm casual atmosphere. On September 18, 2006 the paint dried and Prickly Pear Restaurant was ready to open. Chef Joe Andes put together a menu of European, Asian, French, and Italian all with an American twist. With 25 years of experience under his belt, Chef Joe Andes has had plenty of time to perfect his dishes. A little known fact is Chef Joe Andes actually has no culinary schooling. Starting his career as a dishwasher at the age of 16, Chef Joe Andes knew cooking was in his blood and his passion carried him all the way to the top working under many top notch chefs. Chef Joe Andes' resume isn't too bad either...15 years as Executive Chef for Ala Carte Restaurants, as well as Executive Corporate Dining and at The Bridgewater Manor. At the Bridgewater Manor he has to prepare for parties from 25 to 2,500 people. Through the Bridgewater Manor, Chef Joe Andes has catered for celebrities like WPLJ's Rocky Allen Show Gram, Billy Joel, James Taylor, Jason Williams, and Larry Holmes (just to name a few!) And now Linda and Joe Andes want to create, for you, a dinner experience like you've never had. Stop in for lunch or dinner...and walk out singing "I feel prickly, oh so prickly!"

Chef and Proprietor Evan Blomgren has over 17 years of experience at some of New Jersey's finest restaurants. Most recently, he added his unique flare to the elegant Lahiere's in Princeton. Before that he served as sous chef at Chamber's Walk in Lawrenceville, N.J., The Metuchen Inn, and Church Street Bistro in Lambertville, N.J. Evan began to gain attention at Martine's in New Hope, PA where he was known for his culinary delights.
Aside from being a member of the American Culinary Association, New Jersey Restaurant Association and Slow Foods, he is a graduate of New York's famed French Culinary Institute.
Evan has been fine-tuning his skills as he prepared to bring all the fruits of his labor together for the opening of his Rocky Hill Inn. It has been his hard work and dedication that has taken the historic building to new found fame. His fresh and inventive menu is the culmination of meeting old world elegance and new world innovation.
