Tyrone and Brenda Jennings stood in their new Katy restaurant, A Taste of New Orleans, and marveled at the welcoming dcor they had created, but much more powerfully at the life they had re-created after the devastation of Hurricane Katrina.
"It's exciting, because we've lost so much," he said. "To be able to say you fought, and you have a fighting chance, is so gratifying."
"We believed," Brenda, 48, added. "Those were my words: Believe. He was going to give up. I said, 'You know what? You cannot give up. You hope and you keep going on, because something is going to happen.' And it happened. You have to have faith. We went out on faith.' "
Her voice quivering and her eyes tearing up, she sought comfort in the arms of her husband.
"God is so good," she sobbed.
That was on Sept. 20, as workers scurried around making final preparations. The next night was the grand opening, and they welcomed a steady stream of visitors who gorged on complimentary fried fish, shrimp, gumbo and potato salad as they were serenaded by jazz saxophonist Steven Richard. And the following night, the restaurant opened and did $1,400 in business.
Tyrone doesn't want to put the cart before the horse, but he says that even before the opening, he fielded nearly identical inquiries from two separate investors: one who wanted to open a location in New Territory in Sugar Land, and another who wanted to open a location in The Woodlands.
He thinks he's locked in on a successful formula: authentic Creole food cooked by two former New Orleans chefs (Harry Forbes of The Commander's Palace and Travis Dixon of the Sheraton New Orleans) and his wife. Brenda's father, Gilbert Boutte, was a chef and groomed her.
"She's cooked with him all her life," Tyrone says. "That's her gift from God. She makes a bowl of gumbo so good you pass out. She makes all her sauces from scratch and serves incredible smoked oysters.

Le Mistral's offerings now boast an upscale bar with flat screen television; wine cellar off the main dining area that seats up to 10; a chef's table in the kitchen for those with impeccable taste who would like a completely individualized meal; banquet room for special occasions and business functions; and soon-to-be specialty foods store, called Foody's Gourmet, which will offer Le Mistral signature items, French specialty foods, cheese, wine, as well as cooking and wine classes.

The idea for a modern American, Irish, Scottish and English sports pub was the brainchild of successful restaurateur Mark DiMartino. Wanting to impress Harrah's hotel executives, Mark dressed in his finest T-shirt, ripped Levi's and well-worn Chuck Taylor sneakers and pitched his idea of a contemporary, Celtic theme sports pub staffed with beautiful servers. And guess what the uniforms would be... knee-high socks and short, sexy plaid kilts with matching plaid halter-tops under white shirts tantalizingly tied to show off the midriff.
After an hour of contemplation, Harrah's top decision makers were obviously impressed with the proposal from this veteran restaurateur. They invited Mark back, wanting to know when he could start the project...and the rest is history.
Mark knew to be successful in this endeavor he would need to assemble the finest restaurant management team to impress Rio executives. He immediately turned to Shannon Reilly, a free spirit and conspiracy theorist and John Reynaud, the original One Shot Johnny, a golf pro who hadn't made a dime on the mini-tour in such a long time he'd forgotten where his bank was.
Several evenings and many cold beers later, Mark had formed the crack team he needed. The successful launch of the Rio Hotel and Casino Tilted Kilt caused a commotion with those interested in bringing the concept to their city and community. This, in turn, left our dynamic trio wondering how to accomplish this task.
