I am a Certified BBQ Judge and have been judging BBQ for over 11 yrs. I am certified in Memphis In May and Kansas City BBQ Association. I have learned about the correct rubs, temps to cook at, woods to cook with, how long to smoke, type of meats, and cuts. Have a question just ask!

The art of true BBQ is that you take a piece of tough cut of meat and cook it in such a way that it becomes gourmet. Low and slow. Low heat and slow cooking. Myths unraveled:BBQ sauces are to enhance the meats flavor.True BBQ does not need a BBQ sauce because if done correctly with a good rub and the membrane removed from the rib prior to rubbing the ribs. The flavor is already in the meat being pulled through as it was slowly cooked. Sometimes you just get a tough piece of meat or it is just too darn salty. This can be caused by the farmer putting out the salt block for there pigs to lick to retain water weight before market especially when the weather has been very hot.No matter what you do it just not going to be a 10. This is where the sauce comes in. If you have a great piece of meat and a great sauce to compliment the meat your OKAY! You have a so so piece of meat with great sauce it saves the day and brings up the flavor and covers the toughness or dryness of the meat cause by too much salt. Salt pulls moister out of the meat and renders fat while cooking. Most pork has plenty of salt in it from its food that it is feed and salt blocks. Now lets say your meat is less than perfect for whatever reason and your sauce is just so so or not that good. You just took yourself out of it. bad to so so meat with bad to so so sauce your done. If you cook your ribs to be fall off the bone then you have over cooked them. Rib meat is perfectly cooked when you can tug the meat off the bone and it comes clean to almost clean. You can test a rib before serving it by doing this test of tugging the meat off the bone then biting down on the bone. If the bone is soft it is over cooked. When it is perfect you can bite down on the bone and it will turn white where your teeth bit down on the bone and the bone is still in tack.

My favorites is Old Key West Key Lime Bar-B-Que Sauce and Marinade made down in Islamorada, FL Keys Area. He makes 12 sauces and marinades. Eight either won Gold, Silver or Bronze metals. Old Key West Foods 81888 Overseas Highway Islamorada, FL Keys 33036 The owner and recipe cook was dying of cancer the last I spoke to him in Jacksonville, FL when he was up for a visit to the MAYO CLINIC. He may of past on now and if so so may of his recipe. I will try to search for his website. Here is another good website as well:
