I see that not 1 person mentioned anything about cajun cooking. That is my specialty since im from Louisiana originally. everybody wants 2 know how 2 cook chinese and other kinds of food but not cajun.

I love Cajun cooking CountryGal, I lived in Louisiana and my grandmother was from Baton Rouge..it takes a well seasoned cook to tackle most recipes. I have not found any good restaurants in Vegas who do a good job with Cajun food.

I can do a mean Jambalaya, I think that's cajun? It's similar to risotto but meatier and spicier, I don't know how authentic my version is but I love it! I think Gumbo is cajun too? I looked up some recipes but haven't tried it yet. Do you know anything about that?

Sadly, I am not good at cooking gumbo, but I cook excellent dirty rice and I also make a spicy blackened fish.(which is Cajun style)***/voice/

Its cooking that I understand comes from new Orleans or Louisiana, sort of spicey or even blackened . I heard about this when I moved to Texas. its Jambalaya and Gumbo and fried crabs and blackened shrimp. or snapper etc. Zits is also I think crawfish boiled with corn on the cob and small potatoes in spicey Zatarrans spices realy goooood.

Cajun cuisine is a form of cooking that originated in Louisiana, USA. Cajun cuisine is a mix of French, Canadian, African and Native American influences. A Cajun meal is usually cooked in three different pots. One pot is used for the rice or cornbread, another is used for vegetables and the third is used for the main dish. Onions, celery and bell-peppers are basic ingredients in Cajun cuisine. The seasonings used are mainly cayenne pepper, parsley, bayleaf and scallions.
