When it comes to the dry ingrediants I would say one teaspoon of each should be enough at a time except the star anise. This stuff is potent so at the very most put in 6 of the star anise. And it should be plenty. As far as the garlic and the ginger and the green onion I would say about 6 cloves of garlic three sprouts of onion and about a d cell battery size chunk of ginger should be enough.

after the 15 minutes you put in the the rest of the seaonings. such as the five spice the pepper the garlic and ginger the star anise. all the solid ingrediants. If you want you can wrap everything into some cheesecloth or something to that effect. You then put in the wine and the soy suace. If at any point you have more ingrediants than water put more water in. now as to how much of each it's really about taste do you like the taste or not.

make sure the water covers the bones completely. Over the next 5 to ten minutes there's gonna be some stuff that boils up to the top. Foam looking stuff take a spoon and take the foam off. When the foam stuff isn't coming up in big amounts anymore you can get all the vegatables and dump them in all chopped into big chunks. The carots the radish the onions and celery. Now you let this boil for at least 15 minutes over medium to medium high heat.

ALmost forgot to give it some color besides the soy suace put in one big vine ripened tomatoe. Now to the portions of this dish. and how to prepare the dish. The first thing you are gonna do is get as big of a pot as you can get and put some water to it about quater of the way will do. ANd boil some water. Once you have the water boiling then you put the bones in.

If you can't get to a asian market then see if there are any mexican stores about. Or a specialty store or visit your local butcher. Because normal stores to not carry this cut of meat. It has fat but not a lot of it. The best part of this is the tendons after cooking it for two to three days the tendons turn into almost a gellatin consistancy that will just melt in your mouth.

and last but not least the meat. If you were able to get to a chinese market then buy depending on size one to two maybe three pieces of nice looking whole beef tendon not a lot of fat looks clean no marks shiny looks fresh in other words. Around 3 lbs I think is good enough more if you like if you dont have a big enough pot just cook the beef in batches.

For those who can not those that can't get to such a food market. Then either buy it online or if you have to buy some of these materials from your regular super market. Star anise, cinnamon, Szechuan pepercorn, cloves, and cassia. The pepercorns, and cassia can be substituted with fennel seed and regular pepercorns. Well it is but you are gonna be cooking a big pot of thise stuff enough hopefully to feed 6 to 7 people and have some left for a base.

If you really can't get either of these then kikkoman or maggi seasoning sauce will make do. Make sure you get regular soy sauce not dark not lite not aged just regular. With Maggi seasoning it is on the salty side so use "sparingly" taste it first and you will know why I said sparingly. If you have managed to get to a chinese or ethnic super market buy some shaoxing wine to use instead of sherry. Also buy some five spice powder and five spice stewing bags.

You might be able to substitute one maybe two items but any more than that and it just wont taste the same. At least with my limited experience of cooking. One of the biggest thing since your gonna use a good portion of this stuff soy suace. Go to the chinese store and get either LeeKumKee or WanJaShan.

Ok up until this point you should really be able to get everything at your regular super market or if not one of the whole foods market. The following stuff you really have to try and get from a chinese food market. For things to taste really really good as opposed to decent but nothing to write home about.
