Hey Cassy, What kind of tips are you looking for? The three most important things I can tell you is keep EVERYTHING spotless, keep all food below 40 degrees or above 140 and most of all cook with your heart. People always ask me, even with my recipe, why my food taste better than when they try it. PASSION, I love to cook for people and I just have a feeling of what spices I need. You can't always use exactly the same ingredients because the food (meat, poultry, fish, etc.) will never be exactly the same. My three secret ingrediants for "adjusting" foods are lemon, cinnamon and brown sugar. Next time you make a spaghetti sauce throw in a pinch of brown sugar and tell me it doesn't make it better. If you can post a more specific question I will do what I can to help.

Hey indie, Are you talking a chicken breast on a salad or a creamy chicken salad. For both you can add a little cajun seasoning, actually sold as creole seasoning, and for the creamy if you are using mayonaise you can add the juice of a quarter of lemon. I don't like it but you can even shave a little of the peal. It gives it a different flavor than the juice and the oil of the peal and the juice will give you a slightly better emulsification than just mayonnaise.
