Since teaming up in the early'70s, Bill McCormick and Doug Schmick have established more than 50 restaurants and catering operations throughout the country - an extraordinary feat in a business with the highest attrition rate of any in the United States. The two men, very different yet surprisingly compatible, have established themselves as entrepreneurs with one collective vision, to run the nation's premier family of seafood restaurants.The history of McCormick & Schmick's Seafood Restaurants began when Bill McCormick purchased Jake's Famous Crawfish Restaurant located in Portland, Ore., and brought the more than-0-year-old landmark back to life. When asked the secret of how he revitalized a restaurant on the brink of closing, McCormick says, "I like nothing better than being a good host." In addition to his spirited personality, McCormick has an ability to bring out the best in other's managerial skills and strengths, a combination essential in a successful business.Part of the managerial talent McCormick tapped was Doug Schmick, a management trainee. The two formed a partnership in'74, creating Traditional Concepts, a precursor to today's McCormick & Schmick's Seafood Restaurants. In'79, they opened the original McCormick & Schmick's Seafood Restaurant in Portland, Ore. Since that time, the company has expanded to more than 50 restaurants across the country.

Jerusalem's has attracted a faithful clientele that extends throughout the Twin Cities. Customers have called owner Sal Azem from every part of the country, in hopes of obtaining some of their favorite Middle Eastern specialties. The secret of Jerusalem's success lies in the quality of its ingredients, its own original recipes, its authentic blends of herbs and spices, and its "from scratch" approach to preparations. You won't find a Quarter Pounder or a Juicy Lucy at Joe's, but you'll find a burger menu you might not have thought about before. You'll also find pastas and risottos of note, the now-standard garlic mashed potatoes -- but with a number of non-standard toppings -- and appetizers that come in a cut above those found on a lot of menus. Maybe you'd enjoy a lamb burger or a yellowfin tuna burger to break out of your hamburger rut, or a falafel with whipped oregano feta, cucumber, tomato, spinach and mixed greens. The meaty burgers come with fries, and the veggie ones don't. A very reasonably priced wine list and selection of foreign and domestic beers complement Joe's diverse fare. Lunch and dinner ''specials'' refer to the food, not the price: grilled beef sirloin with a portobello barley will run you about $18, whereas the burgers are $11 or less. Almost everything here comes with add-on options for a couple of bucks, so you can venture beyond the basic entree. You may also have to venture blocks away to find parking at busy times, but this inconvenience is offset by the attraction of rooftop seating, which affords a nice view of the Basilica, Loring Park and the Walker Sculpture Gardens. -- John Sharpe

Lorenzo Azria, who owns Salsa a la Salsa with his wife Elvia, and runs it with the help of plenty of family: his daughter waits tables during the day, his son-in-law at night, and the youngest kids help when they can. Lorenzo grew up in the Mexican village of Popo Park, near the town of Amecameca, which is on the side of those legendary volcanoes, Popocatepeti and Ixaccihuati, which are visible from Mexico City."Mixiotes is an ancient, pre-Columbian way of cooking," explained Lorenzo, when I talked to him on the phone for this story, "but they used to use the outer skin of maguey leaves. Then, when I grew up, my mom and her family put cactus leaves in everything, because they grow in our backyards." One day Lorenzo saw a recipe for mixiotes made in aluminum foil - which he thinks is horrible, because it makes the food taste like metal 00 and got to tinkering, and a few decades later we've got this marvelous dish in Minneapolis.Lorenzo had plenty of time to tinker. After leaving the side of the volcano he spent most of the'70's '80s, and '90s in Los Angeles hotels and catering companies, where he married Elvia (sister to the founder of the Tacos Morelos empire), learned French cooking techniques, watched the California Cuisine revolution, and invented all sorts of dishes that combined authentic Southwestern tastes and techniques with the low-cal, high-taste needs of Los Angeles's high-octane power-players. Lorenzo says he has cooked for Julia Roberts and Jackie Collins, and just ask him about the things he has catered for Danny DeVito's Fourth of July festivities.

Once upon a time, a child was born in Jerusalem to a family of--. At the age of 6, his father passed away. His mother no longer could afford to feed him so she placed him in orphanage school . He studied at orphanage school until the 6th grade. After 6th grade his mother could not afford to feed him nor continue his education.He had a wonderful idea and bought a frying pan, gasoline burner and set up a stand in front of the boarding school.Falafels was his specialty and soon he became known as the FALAFEL KING.
